Holi is a celebration of colours, but for us, the extra long weekend is an excuse to dig into some delicious culinary experiments and blame it all on the festivities. If you are the same and find yourself looking out for something interesting, we’ve got the deets for you! With the popularity of pop ups in the city, everyone from homegrown brands to hotels are jumping on the bandwagon, and we aren’t complaining. This month sees not one but three fresh concepts that come highly recommended, so read on and pick one Panacea We were the first to tell you about the Bao magic that was going on at The Bao Haus Co (link to story) and now that they’ve become a common name around town, they are amping up their game. For their first ever pop up, the company behind the venture – Hauslandish Hospitality – has collaborated with renowned mixologist Mariki Sayles from the bartending team at the 3 Michelin rated Le Bernardin in New York for a weekend project. Their work culminates into a pop up that has a prix fixe menu of innovative cocktails paired with small plates. Sayles is a hardcore cocktail enthusiast, so expect in-house infusions, tinctures, syrups, emulsions and some drama with molecular mixology. She has sourced and used local ingredients on the menu with drinks such as Black Sesame Tequila paired with tamarind, grapefruit and bitter orange, and Tiki Drinks using malted banana juice, coconut milk, mango, pineapple and papaya. For the grub, Chef Siddharth has a new version of his Pork Belly Bao aka crispy pork belly with a watermelon salad, served with a scallion, chilli and feta emulsion. There’s also the Crispiest Fish and Chips with his special tartar sauce, Pork Belly Burger and even a vegetarian and non-vegetarian version of Banh Mi Bruschetta. This time around, they’ve got Sadak Chef Saransh Goila taking over cooking duties. Known for his keen interest in local Indian food, Saransh has been on the move sampling unexplored secret preparations from every corner of the country and is recognisable on social media for his #GoilaButterChicken. Now, he’s bringing his prowess to your table with a menu featuring local delicacies from six states spread across six courses. Yum! After bringing the concept of pop ups to their venue with bThalassa from Goa and Guppy by Ai from Delhi, they are now celebrating their 15 years in the business with an international bar pop up. 1 Tippling Place is renowned for its one-of-its-kind cocktail experience, which is why it’s considered as one of the finest bars in America. Helmed by Anne Frey. you can expect her signature speakeasy drinks made from fresh juices, house-made syrup and largely housemade bitters. Her Philadelphia bar serves vodka unlike other cocktail bars, which will also be on the bar menu here. Get yourselves a Philadelphia Fish House Punch, which comes loaded with white rum, black rum, peach liqueur, brandy, lime cordial and citrus before they hang up their bar tools at the end of the month!
