Indian-American Chef Floyd Cardoz brings to Bombay the flavours of his recently opened modern Manhattan eatery Paowalla. Visitors can sample his Top Chef-winning Wild Mushroom Upma, as well as newer innovative creations that meld Indian flavours and Western cooking techniques. Some of the dishes on offer include the Earl Grey Chai Sticky Bun, Kokum Sol Kadhi Ceviche, Avocado and Refried Rajma Chilaquiles, Ghee Roast Benedict with Curry Leaf Hollandaise, Eggplant per Eeda and the Dosa Waffle. To accompany your meal, the bar menu features delicious new concoctions such as the Haldi Highball, Raspberry Sharbat and Tamarind Margarita.
